Cooking in large batches for your family often leaves you with leftovers. Using up leftovers is important for minimizing food waste and therefore saving money. But let’s face it – it’s not always easy!
There are some ways to repurpose your leftovers from traditional recipes and turn them into fresh, new meals for you and your family!
You can transform leftover Chili into Stuffed Peppers, Tex Mex Lasagna or Chili Burritos. Check the recipes and get the kids involved in cooking.
Chili Stuffed Peppers
What You’ll Need: Leftover chili 1 cup brown rice Bell peppers(any color) 1/3 cup shredded cheddar cheese Directions: 1 Preheat oven to 400°F 2 Cook brown rice according to package directions 3 Wash your desired amount of peppers and cut the tops off. Spoon out the seeds 4 Combine brown rice with leftover chili 5 Scoop about 3 tablespoons of mixture into the bottom of each pepper and sprinkle with shredded cheese. Repeat this step until the peppers are full 6 Bake for 30 minutes. Enjoy!
What You’ll Need: 4 cupsleftover chili 9 lasagna noodles 1 cup low-fat cottage cheese 2/3 cup Mexican-style shredded cheese Directions: Preheat oven to 375F Cook lasagna noodles according to package Grease a 13×9 inch baking dish. Spread 2 cups chili onto bottom of dish and layer with 1/2 cup cottage cheese, 1/3 cup shredded cheese, and 3 lasagna noodles. Repeat layerstwo times or until chili is gone Bake for 60 minutes or until heated through. Let cool for 20 minutes before serving. Enjoy!
What You’ll Need: 1 cup leftover chili 1/2 cup brown rice Flour tortilla wraps Optional fillings: sour cream, cheese, diced tomato, shredded lettuce, avocado, jalapeños Directions: Cook rice according to package directions Mix rice with leftover chili Scoop desired amount of mixture onto tortilla and add any otherfillings of your choice Wrap, and enjoy!
