In Season: The Sweet Potato

Sweet potatoes are nutritious, high in fiber, very filling, and delicious. They can be eaten boiled, baked, steamed, or fried. Sweet potatoes are usually orange but also found in other colors, such as white, red, pink, violet, yellow, and purple. Sweet potatoes are a good source of an array of vitamins and minerals including iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C.


For an easy side dish, follow this recipe:


Oven Baked Sweet Potato Recipe:

  1. Preheat the oven to 425 degrees.
  2. Place a piece of foil on a baking sheet.
  3. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet, and roast for 40-50 minutes, or until puffed up and soft inside when pierced with a fork.
  4. Top them with a dab of butter or honey, or make it a meal by stuffing with a bit of cheese of your choice and steamed vegetables.
